For a 12-14lb turkey add the seasoning to 2 gallons of water and bring to boil. Remove from heat and allow to completely cool before adding the turkey. The turkey should sit in the brine in your refrigerator or cooler.
Adjust brining time as follows: Turkey: 8-24 hours Chicken: 4 hours Pork: 2 hours
Ingredients: Salt, brown sugar, white peppercorns, orange, garlic, black peppercorns, onion, rosemary, pink peppercorns, allspice berries, juniper berries, green peppercorns, thyme, basil, oregano, sage and bay leaves.
