Tzatziki Sauce

Tzatziki Sauce

Tzatziki is a salted yogurt and cucumber sauce used in many greek dishes.  It is light and refreshing.  This is an Americanized version using full-fat Greek yogurt.  

Ingredients:

1/2 cup finely grated cucumber

1 cup whole milk greet yogurt

1 tablespoon fresh lemon juice

1/2 tablespoon extra-virgin olive oil like Graza Drizzle Oil

1 garlic clove, grated

1/4 teaspoon sea salt

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh mint, optional

Directions:

Grate cucumbers using the larger holes on your grater

Squeeze the water out of the grated cucumber by placing in a paper towel and squeezing until all the water is out.

Combine all ingredients and let set overnight in the refrigerator.  If you don't have overnight, at least chill for an hour or so but recommend overnight so the flavors can completely come together.

Remove from refrigerator and garnish with a drizzle of olive oil and a couple mint leaves.

How to use Tzatziki Sauce:

You can use the sauce on homemade gyros, with fresh vegetables and pita pieces or with crackers.  You can use it as a condiment on a sandwich or wrap.  Try it on a flatbread with some fresh vegetables.   It's also great with grilled vegetables.
