This is a great and refreshing rice dish. Makes a great side dish with just about anything.
Ingredients:
1-1/2 tablespoon extra-virgin olive oil
1 garlic clove, minced
1/2 onion (finely chopped - for this recipe I used a white onion)
1-1/2 cups long grain white rice, uncooked
1-1/4 cups chicken broth
1 cup water
1 large lemon (1 teaspoon of zest plus 3-4 tablespoons of juice)
3 tablespoons finely chopped parsley
3 tablespoons chopped ill
Directions:

Heat oil over medium heat in large saucepan.

Add garlic and onion. Cook for 5 minutes or until translucent.

Add rice and stir until rice turns mostly translucent.

Add broth and water. Place lid on, bring to simmer then turn heat down to low.

Cook for 12 minutes or until water is evaporated.

Remove from heat and rest for 10 minutes with the lid on.

Remove lid. stir in the lemon zest, lemon juice, herbs and salt and pepper to taste.
Can serve warm or at room temperature. Serves well as a light side dish with just about anything. We especially like it with chicken gyros.
