Greek Lemon Rice

Greek Lemon Rice

This is a great and refreshing rice dish.  Makes a great side dish with just about anything.

Ingredients:

1-1/2 tablespoon extra-virgin olive oil

1 garlic clove, minced

1/2 onion (finely chopped - for this recipe I used a white onion)

1-1/2 cups long grain white rice, uncooked

1-1/4 cups chicken broth

1 cup water

1 large lemon (1 teaspoon of zest plus 3-4 tablespoons of juice)

3 tablespoons finely chopped parsley

3 tablespoons chopped ill

Salt and pepper

Directions:

  • Heat oil over medium heat in large saucepan.
  • Add garlic and onion. Cook for 5 minutes or until translucent.
  • Add rice and stir until rice turns mostly translucent.
  • Add broth and water. Place lid on, bring to simmer then turn heat down to low.
  • Cook for 12 minutes or until water is evaporated.
  • Remove from heat and rest for 10 minutes with the lid on.
  • Remove lid. stir in the lemon zest, lemon juice, herbs and salt and pepper to taste.

Can serve warm or at room temperature.  Serves well as a light side dish with just about anything.  We especially like it with chicken gyros.
