Spiced Caribbean Meatballs with Rice

These spiced meatballs are super easy to prepare and a great light and healthy dish that incorporates sweet mango with the warm flavors of our Nashville Spice Company Caribbean Spice blend.

 

Ingredients

1/2 C dry whole wheat bread crumbs

1 lb lean ground beef

1 egg

1 Tbs Nashville Spice Company Caribbean Spice

3 Tbs cornstarch

1 Tbs vegetable oil

2 Tbs honey

2 tsp cornstarch

11/2 Tbs cold water

1/2 C orange juice

2 Tbs lime juice (about 1 lime)

1 medium mango, peeled and diced

1 tsp Nashville Spice Company Red Pepper Flakes, or more to taste

3 C hot cooked rice

 

Directions

Thoroughly combine bread crumbs, ground meat, egg and Nashville Spice Company Caribbean Spice. Shape into 1-inch diameter balls (18 meatballs yields 6 servings). Place on tray, wrap in plastic and refrigerate until needed. Bring to room temperature before cooking.

Preheat oven to 350°F. Sprinkle 3 Tbs cornstarch on a plate or board.

In a skillet, heat the oil over medium-high heat. When hot, roll meatballs in cornstarch and carefully add to hot oil. Brown all sides, remove and drain on paper towel.

Whisk together 2 tsp cornstarch, water, orange juice, mango and red pepper flakes.

Place meatballs in a single layer in small baking dish. Pour mango mixture over top, bake 25-30 minutes, basting meatballs with mango mixture during cooking. Meatballs should be cooked through and sauce slightly thickened.

Serve over hot cooked rice.
