Slow Cooker French Onion Soup

2 Tbsp. olive oil
5 small onions, thinly sliced
6 cups low sodium beef broth
1 tsp. Beef Better than Bouillon
4 Tbsp. Nashville Spice Company Onion Soup Mix
8 slices French bread, about 1 inch thick
1 cup shredded Gruyere
Salt & pepper, to taste

Slice onions. Heat olive oil in a heavy-bottomed skillet. Sauté onions until slightly browned, about 15 minutes.

Combine onions, broth, bouillon, and Nashville Spice Company Onion Soup Mix in a slow cooker. Cook on HIGH setting for 4 hours, or LOW setting for 8 hours.

Ladle soup into serving bowls. Top with a slice of French bread. Sprinkle cheese over each bread slice. Put soup bowls under broiler until cheese is melted.
