This delicious and easy chili will surely warm you up on a cool day. Also great on a Sunday watching football.
Ingredients:
8 Cups chicken broth
1 lb chicken of choice (tenderloins, breast, thighs or a mixture)
1 Medium white onion diced
2 Tablespoons minced garlic
1 Small can of green chiles
1 Small bag frozen corn
2 cans of white beans
1 Block cream cheese
1 8oz container of sour cream
1/4 Cup Nashville Spice Company's White Chicken Chili Seasoning
Directions:
- In preparation, fry the frozen corn in a skillet to add more flavor and depth to the chili - then set aside. Fry corn with butter or olive oil until slightly browned/charred on medium/high heat. This won't take long.
- Dice up white onion
- In a stock pot, brown the onions, garlic and chiles
- Add in chicken broth
- Add beans, raw chicken, and fried corn
- Bring to boil then reduce heat and simmer with lid on for 2 hours
- Using tongs, remove chicken and shred it using 2 forks in a bowl or plate and return it to the chili
- Add cream cheese and sour cream
- Simmer for another hour lid off
Optional toppings for serving: Shredded cheese, avocado, sour cream, cilantro, tortilla chips
