Green Goddess Dense Bean Salad

Ingredients

1 can chickpeas or white beans, rinsed and dried

1 container cherry tomatoes, halved

1/2 large red onion, diced

1 English cucumber, diced

1/2 cup crumbled feta (or more to taste)

 

For the dressing

1/3 cup extra virgin olive oil

1 tablespoon balsamic vinegar

2 teaspoons lemon juice

1 teaspoon dijon mustard

1 teaspoon Nashville Spice Company Green Goddess Seasoning

Salt and pepper to taste

 

In a large mixing bowl, add the beans, tomatoes, onion, cucumber, and feta.

In a jar, add dressing ingredients. Whisk or shake to combine, then pour over bean mixture.

Toss ingredients together, and enjoy! For a deeper flavor, let marinate in the refrigerator for at least 30 minutes.
