Curried Chickpea Salad


2 cans chickpeas, drained and rinsed
2 carrots, grated
3 stalks celery, diced
1/4 cup dried cranberries, chopped
1/2 - 3/4 cup mayonnaise, depending on preference
2 Tbsp. Nashville Spice Company Madras Curry Powder
Large pinch kosher salt, to taste


Drain and rinse your chickpeas, then add to a bowl. Grate carrot, dice celery and chop cranberries. Add to bowl. Add remaining ingredients and mix well. Let sit 2-4 hours before enjoying for maximum flavor.
