2 lbs. Sweet Potatoes, peeled and cubed
1 Cup Diced tomatoes
1 Cup Onion, diced
1 ½ Cups Chickpeas
2 Garlic cloves, minced
3 Tbsp Olive oil, separated
1 Cup Baby spinach
Pinch of salt and pepper
Preheat oven to 425F. Place sweet potatoes on a baking sheet and toss with 1 Tbsp olive oil. Add Nashville Spice Company One Fowl Swoop seasoning and toss again to coat. Place in oven and roast for 35 minutes.
Heat skillet to medium-high and add olive oil. Add onions and cook for 4 minutes. Add garlic and cook for 3 more minutes.
Add tomatoes and cook 3 minutes. Add chickpeas and stir. Add spinach and cook until it’s wilted. Stir in sweet potatoes and cook an additional minute.
