Baked Nashville Hot Chicken

Ingredients

1 lb boneless, skinless chicken breasts, cut into 4 portions

1/2 C almond flour or all-purpose flour

1 C low fat buttermilk

1 egg

1/2 C Panko crumbs, unseasoned

2 Tbs olive oil 

3 tsp Nashville Spice Company Nashville Hot Chicken Seasoning

 

Directions

Preheat oven to 425°F.

Prepare three shallow dishes, each large enough to hold 1-2 pieces of chicken.

In the first dish, add the almond flour.

In the second dish, whisk together the egg, buttermilk and 1 tsp of Nashville Spice Company Nashville Hot Chicken Seasoning.

In the third dish, mix together the Panko crumbs and 1 tsp of Nashville Spice Company Nashville Hot Chicken Seasoning.

Completely dredge each chicken breast in flour, shaking off any extra before moving to the next dish.

Coat chicken in egg and buttermilk mixture.

Move chicken to the third dish and cover completely with Panko crumbs.

Place breaded chicken on a nonstick baking sheet. Bake 25-30 minutes or until meat thermometer reads 165°F. Remove chicken from oven and rest for 10 minutes.

In a small skillet, heat olive oil and remaining teaspoon of Nashville Spice Company Nashville Hot Chicken Seasoning. Drizzle hot oil evenly over chicken before serving.
