SPICE OF THE MONTH - Caribbean Spice
Caribbean cuisine is the ultimate melting pot of flavors, going back to the islands early role given their ideal location on the spice trade routes into the Americas. The food from this region has fused a variety of spices and flavors that were preferred by the early African, British, Chinese, Dutch, Indian and Spanish travelers through this area. The people of the islands have made taken this savory diversity and put their own unique twist on it.
Our Nashville Spice Company Caribbean Spice Seasoning is salt-free, hand-blended from granulated garlic, minced onion, ground allspice, paprika, brown sugar, thyme, ground cinnamon, black pepper, nutmeg, lemon peel and cayenne pepper.
Use this blend when you want a little more sweetness and not quite as much heat. This seasoning is ideal for chicken, fish, ribs and pork chops. Make a zesty sauce by combining 2 tablespoons of Nashville Spice Company Caribbean Spice Seasoning mixed with 1 cup of ketchup.
RECIPE OF THE MONTH - Spiced Caribbean Meatballs with Rice
Spiced Caribbean Meatballs with Rice
Sweet heat is always popular around our house. These spiced meatballs are super easy to prepare and a great light and healthy dish that incorporates sweet mango with the warm flavors in our Nashville Spice Company Caribbean Spice blend. If you are looking for a little more heat, amp it up by adding a little more Nashville Spice Company Red Pepper Flakes.
Ingredients:
- 1/2 cup dry whole wheat bread crumbs
- 1 lb lean ground beef - we used 93%
- 1 egg
- 1 Tablespoon Nashville Spice Company Caribbean Spice Seasoning
- 3 Tablespoons cornstarch
- 1 Tablespoon vegetable oil
- 2 Tablespoons honey
- 2 teaspoons cornstarch
- 1 1/2 Tablespoons water
- 1/2 cup orange juice
- 2 Tablespoons lime juice (about 1 lime)
- 1 medium mango, peeled and diced
- 1 teaspoon Nashville Spice Company Red Pepper Flakes - add more if you prefer a bit more heat
- 3 cups hot cooked rice
Directions:
- In a large mixing bowl, add bread crumbs, ground meat, egg and Nashville Spice Company Caribbean Spice Seasoning to the bread mixture. Mix with hands to thoroughly combine.
- Shape meatballs from the ground meat mixture, about 1 inch balls. You should get at least 18 balls for 6 servings. Place the meatballs on a tray, wrapped in plastic and refrigerated until ready to cook. Bring them back to room temperature before adding them to the hot oil.
- Preheat oven to 350 degrees.
- Sprinkle 3 Tablespoons of cornstarch on a plate or board.
- In a medium skillet heat the oil to medium high heat. When the oil is hot, roll the meatballs in the cornstarch and carefully add them to the hot oil. Turn the meatballs to brown all sides and remove them to a paper towel to absorb any extra oil.
- In a small bowl, combine honey, 2 teaspoons cornstarch, water, orange juice, mango and Nashville Spice Company Red Pepper Flakes - whisk to combine.
- Line the meatballs in one layer in a small baking dish. They can be touching, but not on top of each other.
- Pour the mango mixture over the meatballs and cook at 350 for 25-30 minutes, basting the meatballs with the mango mixture during cooking. Meatballs should be cooked through and sauce will thicken slightly.
- Serve over hot cooked rice.

FEATURED PRODUCT - Winter White Honey
Savannah Bee Company's seasonal Winter White Honey is everyone's favorite seasonal item. It's delicious, spreadable, festive, and, as the name suggests, only available during the winter months. It has a decadent flavor with soft texture and robust sweetness. This is a limited inventory, get yours before they are no longer available.
Spread it on warm scones or stir into your morning coffee, or, just it eat by the spoonful! Be careful, this is very addictive!
How it's made - Savannah Bee Company makes their Winter White Honey with a Rocky Mountain wildflower variety that crystallizes quickly. After it's bottled they store it in a temperature-controlled "cold room" until it transforms into a beautiful creamy-white color and has the perfect silky smooth texture. It's hand-crafted artisanal honey at its finest!
What’s with the white stuff at the top? They call that the Angel Fluff. It’s like if marshmallows and meringue had a baby. Much like cream rises to the top during dairy processing, this layer of white foamy goodness forms as trapped air bubbles try to escape. Some will argue the Angel Fluff is the most delicious part.
