Cape Malay Curry Powder (North Africa)
Earthy flavor with some floral sweetness and a tiny bit of heat. Cape Malay curries are usually served with rice and sambals or rice and chutney. The curries may be hot, medium or mild in the heat. The secret to an authentic Cape Town Malay style curry is to balance the heat of the curry with the sweetness of fruit. The most common fruit used includes apricot (both dried apricots and apricot jam), mango chutney and tamarind. Hand blended from coriander, turmeric, fenugreek, cardamom, cumin, cinnamon, black pepper, organic curry leaves, clove, fennel, brown mustard, cayenne and ginger.
Vadouvan Curry (French)
This is a delicate blend and doesn’t do well with high heat or long cooking times as that tends to cook away most of its great complexities. Because of this we recommend adding it toward the end of the cooking process so that you achieve optimum flavor. Hand blended from toasted onion, shallots, roasted garlic, cumin, brown mustard, fenugreek, cardamom, turmeric, curry leaves, nutmeg, maras chile flakes and clove.
Trinidad Curry (South America)
There have been numerous curry incarnations. First, were the masalas, which typically were made without turmeric or ground chiles. The mild curries were usually added to cooked meats and vegetables. While most Trinidad style curry powders tend to be a bit mild (due to the lack of hot chiles) hot pepper sauces are often found on the table to spice these dishes up. Our salt free Trinidad curry powder is hand blended from turmeric, black pepper, coriander, cumin, ginger, nutmeg, cinnamon, cardamom and allspice.
Madras Curry (Indian)
Madras curry is the style of curry that western tastes expect from a curry powder. But don't mistake Madras Curry for a bland curry powder as it is certainly rather complex. We grind the spices for our Madras Curry in small weekly batches to ensure freshness. Hand blended from coriander, turmeric, brown mustard, fenugreek seed, cumin, cinnamon, red pepper flakes, ginger, black pepper and cardamom.
