Vanilla is one of the most expensive spices in the world, second to only saffron. It makes sense, as both vanilla and saffron are so labor intensive to produce. Of the three types of vanilla, Tahitian Vanilla beans are considered the most floral of the vanilla beans.
Vanilla beans pair well with apples, eggs, fish, ice cream, melon, milk, peaches, pears and strawberries. Vanilla Beans work well in combination with cardamom, chili, cinnamon and cloves.
These beans are rich and loaded with flavor, so if you use one in your soup recipe, you can easily remove the bean, rinse it off, dry it thoroughly and use it again!
Tahitian Vanilla Beans are much more floral than either Madagascar or Mexican vanilla beans. Some people say that Tahitian vanilla has hints of anise to it, as well.
