Why use spices? Spices allow you to be creative and adventurous. They can add flavor and aroma from a hint of sweetness to a kick of heat. They can enhance the natural taste of food, like cumin. They can change or enhance the color of your meal, such as turmeric and paprika.

Don't be intimidated with spices, the more you practice and use them, the more spices you will want to experiment with in your kitchen. We are here to help you add more spices to your meals!

This month we are featuring our Nashville Spice Company Organic Vietnamese Cinnamon Powder and sharing our delicious Peach Crumble recipe with you.

SPICE OF THE MONTH - ORGANIC VIETNAMESE CINNAMON POWDER

Our Nashville Spice Company Vietnamese Cinnamon is highly prized among bakers and chefs for the intense flavors it gives to breads, caked, cookies, dumplings, ice cream, pastries, pies, and puddings. You can use it in savory dishes as well! It’s incredible in chutneys, pickles, meat glazes, soups, stews, squash, and vinegars. It makes for a great enhancement in hot beverages, particularly coffee, cocoa, cider, and tea. You can sprinkle some in craft fall beers and add to that autumnal feeling.

Use this cinnamon as a fruit topper. Apples, apricots, blueberries, cherries, and oranges are good choices. As for vegetables, you can dust carrots, onions, and spinach with cinnamon for an unexpectedly pleasant flavor combination.

When combining with other spices you will discover that Nashville Spice Company Organic Ground Vietnamese Cinnamon pairs nicely with allspice, black pepper, cardamom, cloves, ginger, and nutmeg.

When baking or cooking with Vietnamese cinnamon, you should only use a very small amount and then add more if you deem it necessary, as just a tiny amount of this cinnamon will impart a lot of flavor.

This cinnamon is made up of 4% to 6% essential oil. The essential oil is what gives the cinnamon its intense, memorable flavor.

 

RECIPE OF THE MONTH - PEACH CRUMBLE

Peach Crumble

Here's a nice and easy fresh peach recipe for dessert that comes together quickly. With its warm spices, bubbly filling and the crunch of the crumble this makes a delicious treat, especially when guests come for a visit. Its sweet crunch brings back memories of the good old days before homemade desserts every Sunday became more of a thing of the past.

Ingredients:

  • 1 cup brown sugar
  • 1 cup quick cooking, rolled oats
  • 1 1/2 cup flour
  • 1 cup unsalted butter, softened
  • 1 Tablespoon Nashville Spice Company Organic Vietnamese Cinnamon Powder
  • 1/2 teaspoon Nashville Spice Company Ground Nutmeg
  • 1/2 teaspoon Vanilla Extract
  • 5-6 medium peaches, peeled and sliced
  • 3 Tablespoons all purpose flour
  • 1 teaspoon Nashville Spice Company Organic Vietnamese Cinnamon Powder

Directions:

  1. Preheat oven to 375 degrees
  2. Spray a 9x13" pan with pan spray
  3. In a medium bowl, combine all of the ingredients for the crumble
  4. With a fork or pastry cutter, work the ingredients together until they become crumbs
  5. In a large bowl, combine the peaches and vanilla extract, toss to coat
  6. Add the other filling ingredients and toss together with the flour, cinnamon and nutmeg until the peaches are coated.
  7. Arrange the peaches completely covering the bottom of the pan
  8. Sprinkle the crumble evenly across the top of the peaches
  9. Bake at 375 degrees for 45 minutes
  10. Serve warm

Serves: 12

With notes of Sandalwood, Chicory and Clove, these are their heaviest bitters and pair perfectly with Whiskey, Scotch and Bourbon.  Recommended Pairings: Syrups+Shrubs: Rosemary Sage Syrup, Coffee,Vanilla+Cocoa Syrup, Jalapeño, Lime+Cilantro Syrup, Hibiscus Syrup, Ginger Beer, Old Fashioned Tonic, Apple Cardamom Shrub, Blood Orange+Ginger Shrub, Blackberry Peppercorn Shrub, White Jasmine+Grapefruit Shrub and Pumpkin Spice Shrub

Baltimore Bitters - Their Baltimore bitters are an ode to their hometown. Reminiscent of crab boils in the summer and Old Bay seasoning, their Baltimore bitters take celery to the next level. Great for any cocktail calling for celery bitters and superb in a Bloody Mary. We suggest being adventurous and adding them to smoky whiskeys and mescals! Recommended pairings: Syrups: Rosemary Sage Syrup, Spicy Ginger beer, Old Fashioned Tonic Syrup, Lemon Basil Syrup and Jalapeño,lime+Cilantro Syrup.

Shrub Pairings: Blood Orange+Ginger and Watermelon Mint Shrub
